Maltodextrin have properties of preventing rough crystal, and low accessibility. Using it in candy can prevent the candy melting by heat and crystallization, then extend the guarantee period.
Maltodextrin can mix into some kind of ice creams with high fat content to replace part of grease, debase its heat. Maltodextrin will not affect the taste of the ice cream as the gel which made by water and maltodextrin have the same taste as the grease.
